Signature Summer Dish of the Day: Fried Rice
Jasmine Fried Rice
This delicious fried rice dish consists of Jasmine white rice, mixed vegetables including onions, carrots, and celery, eggs, peanuts, a dash of soy sauce, and roasted sesame seeds. Can serve up to 4 people.
Ingredients
3 cups of Jasmine (or long grain) white rice
1 whole onion (red or white), chopped into large pices
3 carrots, peeled and chopped into large splits
1 or 2 eggs, beaten
1 celery straw, chopped
3 tablespoons cooking oil
Nuts (peanuts or cashews, or any of your choice)
Tomatoes, Sweet peas (optional)
Soy sauce
Roasted sesame seeds
Cooking Instructions
- Boil the white rice separately using a rice cooker or normal cooking pot. Don't use too much water. Rule of thumb to remember: 2 cups of water for 1 cup of rice
- In a large frying pan, pour in the cooking oil and stir the egg in. Cook till it lightly coats the pan
- Add in mixed vegetables, including tomatoes if desired. Other vegetables like sweet peas can be added
- Mix thoroughly. Extra tablespoon of oil can be added to prevent the mixture from sticking to pan
- Once rice is fully cooked, add into the pan of mixed vegetables and eggs. Mix thoroughly.
- Add in nuts and pour in soy sauce lightly throughout the mixture, stirring in thoroughly to ensure even coating and mixing
- Continue cooking for about 10 mins while stirring continuously and intermittently
- Serve hot as desired
