Mashed Potatoes and Peas with Stewed Chicken Masala and Avocado
Ingredients: Mashed Potatoes & Peas
1 bag Russet Potatoes, peeled and cubed
1 cup Sweet peas
1/2 Onion, diced
1 Tomato, chopped
Ingredients: Stewed Chicken
6 chicken thighs, skinned
1/2 Onion, diced
1 Tomato, chopped
Chicken Masala
Vegetable or olive oil
Cooking Instructions: Mashed Potatoes & Peas
- Boil cubed potatoes and sweet peas in a large cooking pot, with salt added for taste
- Once boiled, pour off excess water, add in diced onion and tomato, and mash thoroughly using a wooden spoon
Cooking Instructions: Stewed Chicken Masala
- In a large cooking pot, boil chicken thoroughly for about 25 minutes to ensure thorough cooking and have meat that easily falls off the bone
- Once fully cooked and excessive water drained, add in cooking oil, diced onion and tomato while stirring vigorously
- Sprinkle in 1/2 tea spoon of chicken masala spice
- Add salt
- Serve as side dish with mashed potatoes & peas above (or any other carbohydrate/salad as desired)
