Honorary Dish of the Day: Our honorary dish of the day today, the delicious Cucumber-Avocado Salad, is a delectable amalgamation of two of my favorite fresh ingredients! There is something just so refreshing about the humble cucumber, and who just doesn't love the ever-versatile and creamy avocado? This is my go-to dish whenever I am craving a quick salad - it's super easy to make, takes only about 5 minutes to put together, and makes for the perfect side dish to any meal. I recently paired this salad with my baked potato & mushroom casserole. There is also room for creativity with this salad - I sometimes add cherry tomatoes and sweet mini peppers to up the ante and add tons of color to it. To make the salad, simply peel 1 whole cucumber (feel free to leave strips of skin for an extra crunchy texture if needed), then dice up 1 avocado into small cubes and place them into a bowl. I made a dressing with 2 tablespoons of extra virgin olive oil, 1 tablespoon of honey mustard,  and 1/2 teaspoon of salt and black pepper. Drizzle the dressing onto the cucumber and avocado mixture and toss lightly to ensure it's all well-coated. Finally, sprinkle a dash of parsley flakes on top and serve as a side dish with a meal of your choice. Enjoy!
