Honorary Dish of the Day: Our honorary dish of the day today is this colorful Glazed Carrot & Beet Roast! Colorful, flavorful, crunchy, savory, and sweet all wrapped up in one delicious side dish...what more could one ask for? For this recipe, I sliced up 3 peeled carrots and 3 beet roots into strips, then drizzled about 2 tablespoons of olive oil as well 1 tablespoon of pure maple syrup, and seasoned with some salt, black pepper, and a dash of paprika. The maple syrup not only adds to the natural sweetness of the vegetables, but also creates the glaze that gives the final dish a glossy, vibrant look. We paired this side dish with the potato & mushroom casserole and cucumber-avocado salad for a complete dinner meal as pictured below.
