Honorary Dish of the Day: Delicious Drop Scones (Mom-approved!)

Honorary Dish of the Day: One of my fondest breakfast memories includes eating my Mom's signature breakfast drop scones whenever I am home. They are a great way to change up your breakfast menu and are simply perfect for a quick morning snack - soft, spongy, irresistibly delicious, and above all smell so heavenly! Be careful though, as you might end up eating more than six of them at a go! After returning from a great trip back home recently, I decided to attempt recreating my Mom's recipe for the first time ever and I can gladly say that the results as pictured above were certified and Mom-approved. 😎 
They are very easy to make - the batter is very similar to pancake batter (flour, eggs, milk, & water) but with slightly a bit more baking powder (about 1/4 teaspoon). Heat up about 3 cups of oil in a pot and once hot, simply scoop a bit of batter using a tablespoon and "drop" it into the hot oil (hence the name drop scones). Let it rise before flipping to the other side and let it cook until golden brown. Depending on the size of the pot you use, you can make as many as 5 drop scones at a time. 
Serve with hot tea or your beverage of choice and enjoy!
