Honorary Dish of the Day: Start your week right with this delicious Homestyle French Toast with Mixed Berry Syrup! Makes for the perfect breakfast or brunch dish and can be paired with a variety of different side dishes as well. While milk is a common ingredient in traditional French Toast, I left intentionally left it out of this recipe and just added about 1/4 teaspoon of cold water to my egg mixture (made using 3 eggs). Hence, this recipe perfect for those who may be lactose intolerant. My intention was to create a more savory French Toast dish and top it off with something sweet, so I seasoned my eggs with a dash of black pepper, smoked paprika, pumpkin spice, salt, and a light sprinkle of dry parsley flakes. After dipping the whole-wheat bread slices in my egg mixture, I lightly pan-fried them on each side with some olive oil spray in a skillet until they were golden brown. For my mixed berry syrup, I simply poured a cup of frozen mixed berries into a small cooking pot, then added 1/4 teaspoon of brown sugar and cornstarch for thickness. I let that simmer under medium heat for about 3 minutes before adding 2 tablespoons of pure maple syrup. I let this simmer for another 2 minutes before turning the heat off and serving warm on top of the French Toast. If you don't want the syrup to be too sweet, you can completely omit the sugar and you'll still end up with a deliciously tasty but not excessively sweet syrup.
