Honorary Dish of the Day: Pearl Couscous Stir-Fry
Honorary Dish of the Day: Our honorary dish of the day today is this yummy Pearl Couscous Stir-Fry. Ever since I discovered couscous, it quickly became one of my favorite go-to staple alternatives to pasta and rice. Pearl couscous, also known as Israeli couscous, is made from semolina or durum wheat and can come in different colors. Couscous is not only super quick and easy to make but also very versatile and makes for a lighter dinner meal, which can be perfect for those occasions when you're not super hungry but still need something quick to eat for dinner. It can be enjoyed on its own as an entree, tossed into a salad, or in as is the case in my recipe, elevated into a delicious stir-fry dish! For this dish, I first boiled 1 cup of pearl couscous for about 10 minutes. I then sautéed some diced yellow onions, tomatoes, peas, cubed sweet potatoes, and yellow squash slices and seasoned this mixture with salt, black pepper, and smoked paprika. Finally, I added in the cooked couscous, mixed thoroughly to blend together, and let this cook for just about 2 minute. I recommend serving this stir-fry hot as a side dish with soup or stew. Enjoy!
