Signature Dish of the Day: Starting off our week with this deliciously good Baked Potato & Mushroom Casserole! I recently made this dish because I wanted to try something new, so I thought...what better way to combine two of my favorite foods than to slow-bake them into a mouth-watering casserole? For this recipe, patience is key - it took about one hour total for this scrumptious meal to be done but the wait was most definitely well worth it! I used both regular potatoes and sweet potatoes, although my initial intention was frankly to only use the latter. My intentions notwithstanding, I am very glad to say that I was beyond happy with the results...these two multifaceted potatoes greatly complemented each other, transforming the final dish into a heavenly sweet and savory medley. I also sautéed cremini mushrooms with sweet mini red peppers, green zucchini, red onions, and tomatoes before adding them to the baked potatoes once they had browned and softened. Finally, I topped it all off with a luscious amount of shredded white and yellow cheddar cheese for extra creamy and cheesy flavor.
