Signature Dish of the Day: Baked Stuffed Red Bell Peppers

Signature Dish of the Day: These scrumptious Baked Stuff Red Bell Peppers are a great way to spice up your home dinner menu! Not only are they as delicious as they look, they are also absolutely carb-free, healthy, and versatile. There are a wide range of options to choose from when creating the stuffing and you can either keep the dish purely vegan/vegetarian or add as much meat as you would like to satisfy your carnivorous palate 😁. I have both vegetarian (bottom left) and meat options (bottom right) shown in the picture above. While the dish may look sophisticated and somewhat daunting, fear not! It's actually very easy to make, with the only caveat being the amount of time required to get done...it takes about 45 minutes in total to ensure the peppers are not too crunchy. There's no need to worry though as your patience will be well rewarded! The bulk of the work involved is in the prep stage - cutting the peppers, removing the piths, and dicing vegetables that will constitute the stuffing mixture. I sautéed some fresh peas with diced celery, onions, and tomatoes for my veggie stuffing and sautéed lean ground beef with some baby spinach, onions, and tomatoes for my meat option. After baking them at 400℉ for about 35 minutes, I topped both off with some white cheddar cheese for extra flavor, then put them back into the oven for another 10 minutes to obtain that beautiful golden crust topping. Serve hot on their own as a main meal or with a side dish of your choice for dinner. Enjoy!
