Signature Dish of the Day: Portobello and Cremini Mushrooms are undoubtedly some of the best meat substitutes. They are not only super versatile and healthy, but also incredibly delicious with a distinct earthy flavor. Spice up your dinner with this hearty, mouth-watering Baked Stuffed Portobello Mushroom recipe - one of my absolute favorite dishes! In this case, my portobello mushrooms did not serve as a substitute but rather beautifully complemented and elevated my meat-based stuffing! There is so much room for creativity with this particular recipe as you can use a wide variety of fillings of your own choosing. I used sautéed lean ground beef with white inions, celery, tomatoes, and mini sweet red peppers for the filling and topped them with white cheddar cheese for an extra crusty and cheesy upper layer. Pro tip - don't throw away the mushroom stems...instead, cut them up into small pieces and add to the filling mixture for extra flavor. One thing I love about this recipe is it's sheer simplicity - very little prep time involved and the only oil you'll need is for sautéing the stuffing. The mushrooms will naturally release a lot of water in the baking process, which helps to keep them moist and juicy. Simple cooking process that results in a highly sophisticated and elegant dish. Bake the stuffed mushrooms at 400℉ for about 30 minutes and serve hot. Enjoy!
