Signature Dish of the Day: Color My World - Butternut Squash & Red Beet Root Roast



Color My World: Honoring this as my comeback signature dish (& post) after a lengthy hiatus! Add a splash of color to your diet this Fall season with a scrumptous Butternut Squash & Red Beet Root Roast combo! Simply cut 1 whole butternut squash and about 5 beet roots into cubes, place them into a flat baking dish (I used glass), add about 3 tablespoons of olive oil, a dash of salt, paprika, & black pepper. Preheat your oven & bake at 400℉ for about 40 - 45 minutes or until soft and the squash has a golden-brown hue at the top.
Below: Served with a side of crunchy iceberg lettuce, mini red peppers, & apple salad with grilled chicken thighs. Great way to feast your eyes while satiating your appetite. Enjoy! 😊
