Signature Dish of the Day: Tired of having rice and pasta as part of your regular lunch/dinner meal or simply looking to reduce the amount of carbohydrates in your diet? Well, worry not...the multifaceted and transcendent Quinoa is here to save the day! As one of the few plant foods known to have all nine essential amino acids, quinoa is truly a bonafide superfood that is not only healthy and easy to prepare, but also super versatile, gluten-free, and rich in energy-building protein. Let's just say it is indisputably the perfect, well-rounded food source! Transform your daily lunch or dinner regimen with this healthy Tri-Color Quinoa & Zucchini Toss. As I've noted before, zucchini is one of my absolute favorite vegetables and I love to experiment pairing it with a wide range of dishes. In this case, it blends perfectly with the quinoa and adds a nice crunchy texture to this this delicious combination. For this recipe, I boiled the quinoa separately (similar technique as boiling rice). I then sliced the zucchini into strips (almost like French fries), sautéed them with some diced onions and tomatoes, and seasoned with black pepper and salt. Finally, I added the cooked quinoa to the sautéed zucchini, mixed thoroughly, and voila! My toss up was ready in 30 minutes...serve hot as a main meal with soup or stew, or simply enjoy as a star dish all on its own. Enjoy!
