Signature Dish of the Day: Vegetable Fried Rice

Signature Dish of the Day: Happy Friday! We are rounding out our week with this simple yet flavorful Vegetable Fried Rice. For many of us, rice is a key staple food in our diets, but I am always looking for ways to elevate the ordinary boiled white rice to the next level since I get easily bored with plain dishes! Fried rice is a great way to up the ante for your lunch or dinner meals with minimal effort. It also provides the opportunity to include a greater variety of vegetables and flavors in your diet. I prefer using long-grain Basmati rice as I find the texture perfect for fried rice dishes and the rice does not end up sticky compared to other brands. Here, I added lots of vegetables including peas, red and orange mini sweet peppers, white onions, tomatoes, and celery. I often add one of my favorite vegetables, the versatile zucchini, and spinach as well...the great news is that there is plenty of room for creativity when it comes to vegetable fried rice so definitely feel free to experiment with many different vegetables! Finally, I drizzled some low sodium soy sauce for extra flavor and a dash of color. Serve hot as a lunch/dinner entree or side dish with soup or stew and enjoy!
