Signature Dish of the Day: Spice up your dinner with this heart-warming Yellow-Eye Bean Stew! I can't recall exactly where I was in when first came across yellow-eye beans, but I knew I had to get these beautiful beans the moment I first lay my eyes on them. I've posted a picture of the raw beans below for reference. I am not usually a big fan of beans but this particular variety has completely changed my view and this nutritious protein has now become a regular part of my dinner menu at home. I just had a very strong gut feeling that these beans would make an amazing stew and knew I had to give them a try. It turns out my instincts were right on the money! These beans are packed with unmatched flavor, have an incredibly smooth and buttery texture, and produce a deliciously thick soup.
