Honorary Dish of the Day: Carrot & Zucchini Medley

Honorary Dish of the Day: We love vegetable medleys here at the Food Raven, so it's no wonder that we are kicking off our week with this healthy and colorful Carrot & Zucchini Medley! We paired this vegetable side dish with our roast pumpkin & acorn squash signature dish for a sumptuous dinner meal. Zucchini is one of my absolute favorite vegetables and it's also super versatile as it can be turned into a wide variety of gratifying dishes. For this dinner side dish recipe, I diced up 2 green organic zucchinis and 1 yellow organic squash into half-moon shapes, I then peeled 2 carrots using a vegetable peeler and created large carrot shavings as shown above using the peeler as well. I also diced up 1/2 red onion and 2 small tomatoes which I fried lightly in some extra virgin olive oil and seasoned with 1/2 teaspoon each of ground black pepper, turmeric, cumin, and paprika before stirring in the chopped zucchini. I let this simmer for about 10 minutes before seasoning with about 1 teaspoon of salt and letting it cook for another 2 minutes. Once done, serve hot as a side dish with an entree of your choice for a delightful dinner meal. Enjoy!
