Honorary Dish of the Day: Closing out our week in style with deliciously tasty Peanut Butter Pancakes as our honorary dish of the day today! Keeping in line with our theme of easy recipes today, these pancakes are simple to prepare yet absolutely yummy and packed with flavor. For my recipe, I used about 1 cup of store-bought cinnamon-oat pancake mix, 1/4 cup of whole milk, 1/4 cup of cold water, 1 teaspoon of vanilla extract, and 2 tablespoons of pure, viscous peanut butter (salted or unsalted). Simply whisk these ingredients thoroughly until they fully blend together and form a smooth batter, then using a measuring cup, pour small amounts into a large griddle and pan-fry with olive oil spray under medium heat until both sides are golden-brown. The peanut butter adds a savory taste to the pancakes and contributes a good amount of energy-giving protein to the dish that will keep you feeling fuller for longer. I topped mine with some delicious banana slices and a bit of peanut butter on the top layer as shown above and also drizzled some pure maple syrup for that extra sweet flavor.
