Honorary Dish of the Day: Our second medley of the day is this healthy, colorful, and flavorful Peas & Spinach Vegetable Medley as our honorary dish of the day today! I used fresh peas, baby spinach, and grated carrots to make this recipe. To make this perfect side dish, I first sautéed my peas with some olive oil, diced red onions, and tomatoes. I seasoned with ground black pepper, some turmeric powder, and smoked paprika. I then stirred in about 2 cups of washed baby spinach, sprinkled some salt to taste, and let this stew under medium heat for about 5 minutes. Finally, I topped the mixture with about a handful of grated carrots for added color and extra flavor and let this simmer for another 2 minutes before taking the dish off the stove and serving hot as a dinner side dish. Quick and easy yet delicious, gratifying, and healthy. Enjoy!
