Honorary Dish of the Day: Our honorary dish of the day today is crunchy and delicious Sautéed Baby Bok Choy! A type of Chinese cabbage, bok choy is a healthy, delicious, and versatile cruciferous vegetable that can be prepared in a variety of ways including steaming, sautéing, stir-frying, or even roasting. It is a very nutritious plant with numerous vitamins and minerals and therefore makes a great addition to any healthy, home-based diet. The "baby" version of this vegetable is basically smaller in size, more tender, and is usually harvested earlier. This super simple recipe takes 10 minutes tops to prepare and only requires 4 ingredients - fresh baby bok choy, extra virgin olive oil, ground black pepper, and salt. Yes, that's it! I used about 5 sprigs of bok chop for this recipe. There's also absolutely no need to cut/chop anything...simply heat up about 2 tablespoons of olive oil in a small griddle under medium heat and then toss the separated stems of the bok choy into the pan. Season with salt and black pepper and stir frequently for about 10 minutes until the leaves begin to soften. I love to retain the crunchy texture in my bok choy as it truly brings out its naturally beautiful flavor. Serve hot as a vegetable side dish and enjoy!
