Honorary Dish of the Day: Smoked Garlic Bean Soup with Sweet Potato Crackers
Honorary Dish of the Day: Our honorary dish of the day today is this hearty Smoked Garlic Bean Soup served with Sweet Potato Crackers. Hearty, healthy, and heart-warming...this delicious bean soup is the perfect comfort food on a crisp Fall evening for dinner. I used a combination of boiled pinto and yellow-eye beans for this recipe (1 cup total). Similar to my previous yellow-eye bean stew recipe, I pre-soaked the beans overnight then boiled them the next day for about 45 minutes. However, unlike that recipe, I poured out the boiling water. I experimented with a smoky garlic flavor by heating up cooking pot under high heat for 2 minutes until it was very hot, poured in about 2 tablespoons extra virgin olive oil, then tossed in 1 teaspoon of garlic powder. I let this powder cook (smoke) for about 3 minutes before adding in chopped onions, and tomatoes. I seasoned with some black pepper, salt, turmeric, and smoked paprika before stirring in the boiled beans. I let this cook and blend for about 10 minutes then added 2 cups of water and let that continue to simmer for another 10 minutes under medium heat. I garnished with dry parsley flakes and served the soup hot with these deliciously crunchy and incredibly tasty 3-seed sweet potato crackers from Trader Joe's (see picture below). These crackers paired so beautifully well with this soup - we absolutely loved them and highly recommend this purchase. Enjoy!
