Honorary Dish of the Day: Keeping up with our distinctively vegetarian theme this week with this delicious and beautiful Stewed Green Cabbage as our honorary dish of the day today! When I lived and worked in Ireland for one year, I was pleasantly surprised to discover that Irish cabbage cooked with bacon was a very popular traditional dish there. While I prefer my cabbage without any meat, I always love to learn more about new and different variations of recipes from around the world so that I can give them a try as well! A cruciferous vegetable, cabbage has numerous health benefits and is naturally loaded with a host of beneficial nutrients. One great advantage with cabbage is that it cooks very quickly so it does not require a huge investment of time to cook. I love my cabbage slightly crunchy so I do not cook it for more than 15 minutes at most. Similar to other vegetables, cabbage tends to shrink in size as it loses moisture while cooking so make sure you plan and adjust your cabbage size accordingly based on the number of people you will be serving. For this recipe, I cut a green cabbage into half then sliced it into very tiny slits as shown above. I then heated up some olive oil in a large cooking pot for about 1 minute before adding diced yellow onions and tomatoes. I seasoned the base mixture with some turmeric, salt, and ground pepper and let it cook for about 3 minutes before adding my chopped cabbage into the mixture while stirring thoroughly to ensure all the contents blended well together. I then let this cook for about 7 minutes under medium heat before sprinkling some grated carrots to add color and extra flavor to the cabbage - carrots and cabbage pair beautifully well! After simmering for another 2 minutes, I then removed it from the stove and served hot as a dinner side dish. Delicious, healthy, and easy to make...Enjoy! 😋
