In our modern fast-paced world, it seems as though we are constantly scrambling for more time to fit everything in our incessantly hectic schedules and barely have any left to dedicate our attention to a critically important aspect of our day-to-day living - cooking (and eating)! While I think 5-minute meals can be just as tasty as hour-long, homemade gourmet dishes and are indeed at times very necessary in order to save precious time, I concur with Chef Keller's view that we should sometimes make time for deliberate cooking - slowing down and fully focusing our efforts on creating a well though-out and absolutely gratifying homemade meal. I hold the conviction that it's important to savor the cooking process just as much as we enjoy sitting down to savor some deliciously good food. So I encourage you to curve out some time to channel dedicated efforts to your home-cooking, whether to create an entirely new dish you have never tried before (use our Recipe Index for ideas 😉) or to upgrade a recipe that has been tried and tested before...even just an hour can be good enough.
