Signature Dish of the Day: Butternut Squash & Pearl Couscous Medley

Signature Dish of the Day: Happy Thursday! It's crazy just how quickly this week has flown by, isn't it? We are doing medleys today here at the Food Raven, and our first is this delightfully colorful and delicious Butternut Squash & Pearl Couscous Medley! This is a very simple but highly rewarding dish that takes just under 30 minutes to make and is one of my absolute favorite alternatives to rice-based and pasta-based dishes. I am a huge fan of butternut squash particularly during the fall season - it's not only rich in numerous vitamins and minerals and thus healthy, but is also very easy to cook and its beautiful orange color instantly brightens up any meal it is added to. I used triple-color pearl couscous for this recipe and it paired very well with the stewed squash.
