Signature Dish of the Day: Happy Wednesday...Our signature dish of the day today is this elegant and finger-licking good Citrus & Honey-Glazed Roasted Chicken! Chicken is undeniably a firm fan favorite in our household...my husband and I especially love to roast or grill chicken for Friday night dinners from time to time. I used boneless chicken thighs for this recipe and marinated it for just about 30 minutes in a new homemade marinade that I created on the spot. The marinade incorporated a variety of herbs and spices including rosemary flakes, ground black pepper, smoked paprika, turmeric, cumin, and a rotisserie chicken spice blend. I also added 1 tablespoon of pure honey in addition to squeezing in some juice from a quarter of an orange and infusing a stronger citrus flavor by using about 1 teaspoon of fresh orange zest. I usually marinate my chicken for much longer - as much 6 hours - but I did not have much time and had to improvise since I had not defrosted my chicken from the freezer much earlier that day. Once I was confident my chicken thighs had fully absorbed all the abundant and aromatic flavors from the marinade, I roasted them at 375℉ in the oven for about 30 minutes. Although I've made roasted chicken many times, this was the first time I decided to go all out and try bold new flavors in my classic roast chicken recipe. The result? Amazingly delicious and moist golden-brown chicken with an invitingly fragrant and tasty citrus flavor. I paired the chicken with my sweet potato pancakes for a heart-warming dinner. Serve hot as a main dinner dish with a side of your choice and enjoy!
