Signature Dish of the Day: Our signature dish of the day today is something that ranks high up on my home menu - Heart-warming Lentil Soup 😋. The perfect vegan/vegetarian dish, lentils are not only super versatile but also a bonafide healthy superfood - they are high in fiber, vitamins and minerals, and energy-giving protein while low in fat and calories. They also contain complex carbohydrates which means they break down more slowly over time before gradually being absorbed into the body. I love to include as many vegetables as possible in my lentil soups and stews - in this case, I added diced carrots, yellow onions, celery, and multicolored mini peppers to create this colorful lentil soup. I additionally seasoned it with ground black pepper, salt, turmeric, cumin, smoked paprika, and rosemary flakes. I usually garnish with cilantro or parsley as well but didn't do so in this case since I already used the highly aromatic rosemary flakes. It's a quick and easy recipe but yields a healthy, hearty, and heart-warming dish that is sure to warm your soul and remain a dinner favorite with everyone who eats it!
