Signature Dish of the Day: Happy Friday! We are wrapping up our week in style with this scrumptious and irresistible One-Pan Roast Chicken & Vegetables as our signature dish of the day today! This was my first time trying a one-pan recipe...I didn't want to spend too much time cooking but needed something quick and easy yet healthy, flavorful, and delicious. That's when this new idea came to mind - why not roast both my meat and vegetables in one pan? Done and dusted! This recipe takes about 40 minutes total (10 minutes of prep and 30 minutes of roasting) but it sure does reward you with a healthy and gratifying dinner meal. There is also so much room for creativity as there are literally no limits to the sheer variety of vegetables one can use...I simply used the vegetables I had readily available in my fridge and they came out great! I also used boneless chicken thighs as I find them to be the most flavorful and juicy portions but you can always substitute chicken breasts if needed. I served this mouthwateringly good roast chicken and vegetables dish over a bed of my delicious and colorful Moroccan Couscous & Spinach Medley which is our honorary dish of the day today as well, and garnished it with some tasty avocado slices on the side.
