Signature Dish of the Day: Our signature dish of the day today is this beautiful and tasty Noodle Veggie Stir-Fry. Simple, colorful, flavorful, delicious, and filling...this dish makes for a perfect for lunch or dinner. I also love the fact that it's very versatile since there are so many different vegetable combinations that one can use to make the stir-fry. For this recipe, I used spaghetti broken in half as my noodle component and boiled it separately for about 12 mins until it was just slightly tender but not too soft. I then sautéed a medley of vegetables including peas, carrots, orange and yellow bell peppers, and cucumber slices in a large frying pan with some olive oil to create the base sauté. I seasoned this with some ground black pepper, turmeric powder, smoked paprika, and some salt to taste before mixing in the cooked noodles and stirring thoroughly to blend well. I also topped this sumptuous stir-fry with some store-bought roasted unsalted cashew nuts - they are one of my absolute favorite nuts to snack on and I simply love the unique crunchy and nutty flavor that they add to the stir-fry. Garnish with some parsley flakes (fresh or dry) and serve hot as a main dish. This is a very hearty, rewarding, and gratifying recipe that takes less than 30 minutes to make and I highly recommend it...do give it a try sometime and enjoy!
