Signature Dish of the Day: We're having a very "eggy" and vegetarian week here at the Food Raven! Our signature dish of the day today is another egg-based dish we love to whip up for a sumptuous breakfast or weekend brunch...the delectable Vegetable & Egg Scramble 😋. While the versatile egg is undoubtedly the star of this dish, the cherry tomatoes and baby spinach beautifully complement it by adding a splash of radiant color and a burst of amazing flavor. For this recipe, I heated up about 2 tablespoons of extra virgin olive oil for about 1 minute in a large frying pan then sautéed the baby spinach and halved cherry tomatoes for about 5 minutes under medium heat before adding the egg mixture seasoned with ground black pepper, smoked paprika, and salt. I then stirred thoroughly to scramble the egg and ensure it did not coat the bottom of the pan. I let this cook for just about 1 minute under medium heat then sprinkled a handful of mixed cheddar cheese on top and allowed another minute for it to melt before removing the pan from the stove. This is a very quick and simple recipe that takes just about 10 minutes to prepare but rewards you with a healthy and flavorful meal!
