Honorary Dish of the Day: Our honorary dish of the day today is this very simple yet downright irresistibly delicious Tomato Omelette. I actually never planned to make this omelette...in fact, it was more of an accidental afterthought as I tried to wrack my brains on creative ways to use up the leftover pieces I had cut out from the tomatoes when making my Roasted Tomato Caprese Bites recipe. And I am very glad my thought train landed on this simple omelette recipe because it turned out to be the perfect vessel for transforming seemingly boring leftovers into an incredibly scrumptious breakfast/brunch dish. To make this omelette, I first cracked 2 eggs over the leftover tomato pieces, seasoned them with a dash of salt, ground black pepper, smoked paprika, and a light sprinkle of dry parsley flakes. I whisked this mixture lightly until all the ingredients were blended well together. I then poured about 1 tablespoon of olive oil in a small skillet and let this heat up under high heat for about 2 minutes before pouring in my egg mixture. I swirled around the pan to spread it out reduced the heat to medium, and let the omelette set for about 3 minutes before flipping it to let the other side cook for another 2 minutes before turning off the heat. I love to lightly brown my eggs just a little bit because it results in a wonderfully soft-yet-slightly-crunchy texture and adds that unmistakably vibrant, inviting color to the eggs as well! I created a delicious omelette sandwich for a complete brunch meal as shown below. Do give this simple recipe a try sometime...Enjoy! 😍😋
