Honorary Dish of the Day: Our honorary dish of the day this Tuesday is this simple yet absolutely tasty and satisfying Mixed Berry & Red Beet Smoothie! I love smoothies for their versatility, simplicity, and unbeatable flavor, with so many varied fruit, vegetable, and nut combinations to choose from plus the opportunity to exercise one's creativity by experimenting with entirely new flavors. For this quick and easy recipe, I used about 1/4 cup of frozen mixed berries including blueberries, strawberries, and raspberries, slices of 1 apple and 1 fresh red beet root, 1 cup of almonds milk, and about 1/4 cup of elderberry juice. I blended this unique amalgamation of ingredients for about 5 minutes until I achieved a smooth consistency and topped it with my all-time favorite sweet potato crackers which truly pair so well with everything under the sun 😄! These unique fruit & vegetable medley of flavors may at first seem rather odd, but I am happy to confidently report that it resulted in such a wonderfully delicious and gratifying drink! Simple, healthy, and perfect for any time of the day whether breakfast, brunch, lunch, or snack time. Give this recipe a try sometime and don't hold back on trying new combinations...some might work and some might not, but you just never know when you might unexpectedly stumble upon a true smoothie goldmine.
