Honorary Dish of the Day: Our honorary dish of the day today is this heavenly Mushroom & Beet Omelette! As I've noted in a previous post, I love omelettes for their sheer versatility...there are literally thousands, if not millions, of different combinations that one can try out. I am back to my beet root marathon this week so I decided to attempt the combination of deliciously savory cremini mushrooms with irresistibly sweet and earthy cooked red beet roots. I am glad to report that this unbeatable combo beautifully complemented each other and was an absolutely delightful breakfast and brunch dish. I paired it with a generous dollop of sour cream to provide a tangy flavor for balance and garnished with some fresh dill for extra flavor and unique aroma.
