Honorary Dish of the Day: Red Beet & Yellow Squash Fried Rice

Honorary Dish of the Day: Keeping up with our beet theme this week, our honorary dish of the day is this colorful and utterly delicious Red Beet & Yellow Squash Fried Rice! This was my first time incorporating this amazingly versatile root vegetable in my recipe and I am so glad I took a chance on it! In fact, I wish I had used more beets in my recipe and I will be looking to use more of it in upcoming recipes. The uniquely earthy yet sweet flavor of the red beet root completely elevated this delicious rice dish to truly new heights. I also added half-moon slices of beautiful yellow squash  as well as peas, carrots, red onions, and tomatoes to complete the vegetable medley in my dish. Finally, I made turmeric rice to add the vibrant yellow color to the rice. I must admit, I was hoping the powerful and deeply red-purplish color of the beet root would ultimately overpower the yellow, but I guess I will need to increase the number of beet roots I used in order to achieve this next time.
