Honorary Dish of the Day: Swiss Chard & Squash Vegetable Soup

Honorary Dish of the Day: Our honorary dish of the day today is this bright and spicy Swiss chard & Squash Vegetable Soup 😋. My husband recently made this soup as a quick and light late dinner dish and it turned out to be so delicious that we plan to replicate it for future meals. To prepare this recipe, he first sautéed a medley of base vegetables including diced red onions, celery, halved grape tomatoes, and a combination of red and green bell peppers. He then seasoned this base with some smoked paprika, ground black pepper, cumin, and a dash of cayenne pepper which added a spicy kick to the soup. He let this simmer and absorb the flavors for about 3 minutes before adding 1 tablespoon of sour cream, chopped Swiss chard, yellow squash, and thawed frozen spinach. He mixed all the vegetables thoroughly to blend all the ingredients well together, seasoned with some salt to taste, and let this cook for another 5 minutes. He then sprinkled some fresh chopped cilantro and added 2 cups of water to create the broth. After the soup had simmered for 5 minutes, he turned the heat off and served the soup hot as a main dinner entree. This soup is quick and super easy to make but is also healthy and comes packed with flavor and an unmistakably nice spicy kick to it as well. Give it a try sometime and let us know how it goes.
