Honorary Dish of the Day: Closing out our week in style with a new recipe starring these absolutely gorgeous, flavorful, and downright delicious Vegetarian Chickpea Meatballs as our honorary dish of the day today! The name of this dish sounds like an oxymoron and technically, these should be called "meatless balls" as they do not contain any meat whatsoever, but I decided to stick to the well-known name as an ode to the original dish. I've written before about how much I love chickpeas, also known as garbanzo beans, through my post about this delicious chickpea stew. They are very hearty, versatile, and come naturally packed with numerous health benefits to boot. I wanted to find a new way to prepare them, and unexpectedly, a light bulb lit up right above my head - why not transform them into vegetarian meatballs? Genius, right? 😄 Well, I am glad this idea popped into my mind because chickpeas turned out to be the perfect substitute for ground meat for this meatball recipe. Although I used eggs as a binding agent, you can create a vegan alternative by using oil as a substitute if you wish to do so. I made a lovely tomato cream sauce to complement the meatballs and paired them with my Spinach-Parmesan Orzo for a complete dinner meal.
