Signature Dish of the Day: Honey-Glazed Sweet Potato Wedges
Signature Dish of the Day: Happy new week! It's hard to believe that we're now into the second week of December already...oh how quickly time flies. We're kicking off our week with these absolutely delightful Honey-Glazed Sweet Potato Wedges as our signature dish of the day today! Sweet, juicy, and healthy, these wedges make the perfect side dish for any dinner meal and are also very easy to make. To prepare this dish, I simply peeled about 6 small sweet potatoes and cut them into wedge shapes as best as I could (this was the hard part 😄). Thereafter, I placed them on a large glass baking dish as highlighted in the photo capture below, and seasoned them generously with about 2 tablespoons of olive oil and 1 tablespoon of pure honey as well about 1 teaspoon each of ground black pepper, smoked paprika, and some salt to taste. I then roasted them at 400℉ for about 30 - 35 minutes until they were fork tender and served them with the tasty Roasted Tomato Caprese Bites as shown in the picture above. I also created a delicious homemade tomato cream dipping sauce which I made using the seeds and flesh I had scooped out from the tomatoes earlier before stuffing them...this was a great way to avoid wasting any element of the tomatoes. I am so glad the resulting sauce was incredibly delicious and paired so well with the wedges.
