Signature Dish of the Day: Our signature dish of the day today is this beautiful and absolutely delicious Tricolor Quinoa & Cucumber Medley! This wholesome dish is very easy to prepare, packed with unbelievably good flavor, and makes the perfect healthy side dish for a lunch or dinner meal. It is truly a well-rounded dish that checks all the boxes! To prepare this dish, I first boiled 1 cup of tricolor quinoa with 2 cups of water for about 15 minutes until all the water was fully absorbed and the grains were fully cooked. I then sautéed some diced red onions, tomatoes, and radish slices with some extra virgin olive oil for about 2 minutes before adding my peeled cucumber pieces that I had cut into half-moon slices. I  seasoned this blend with some ground black pepper, smoked paprika, turmeric, and salt to taste. I let this mixture cook for about 5 minutes before finally stirring in the boiled quinoa and mixing to blend the ingredients well together. After about 1 minute, I turned the heat off and served this tasty vegetable medley warm as a dinner side dish. This can also be served at room temperature or as a salad component and makes 2 servings. Enjoy! 😍😋
