Signature Dish of the Day: Warm Quinoa & Sweet Potato Salad
Signature Dish of the Day: Happy new week! Our signature dish of the day today is this wonderfully colorful and absolutely delicious Warm Quinoa & Sweet Potato Salad 😋. This is a new recipe that recently popped into my mind after I found myself wanting a quick and easy side dish but tired of the old familiar staples that I usually make for dinner. I hadn't made quinoa in a while and we had just recently bought some sweet potatoes, so I thought...why not merge these two uniquely delicious and healthy ingredients together and see what comes out? Well, the result of this impromptu culinary experiment did not at all disappoint and this beautiful vegetable medley that has now become one of my all-time favorites! To prepare this dish, I first boiled 1 cup of tricolor quinoa with 2 cups of water seasoned with some salt and olive oil for about 15 minutes until all the water was fully absorbed. I then sautéed some diced red onions and tomatoes in about 2 tablespoons of extra virgin olive oil in a medium-sized skillet for about 3 minutes before seasoning with some ground black pepper, cumin, and smoked paprika. I then added about 1/4 cup of frozen peas into this base sauté and mixed thoroughly to blend the ingredients together. After about 5 minutes, I poured in cubed pieces of 1 large sweet potato, and seasoned with some additional ground black pepper, smoked paprika, and salt to taste. I then covered the skillet and let it cook slowly under medium heat for about 10 more minutes, checking and stirring from time to time to ensure the potatoes did not coat the bottom of the pan. Add a little water if needed to prevent coating. Once the potatoes were tender, I finally poured in the cooked quinoa and mixed thoroughly to blend well together with the other ingredients. I served this warm with my pinto bean soup as a sumptuous dinner side. Simple, quick, and easy yet supremely delicious, satisfying, and healthy too. Enjoy! 😍
