Signature Dish of the Day: Vegetarian Egg Muffins

Signature Dish of the Day: Happy New Year 2020 and Happy MLK Day to our readers in the US! We're kicking off our brand new season and toasting to the new decade today with these beautiful, bright, and vibrantly colorful Vegetarian Egg Muffins as our signature dish of the day today! Light yet filling, simple yet sophisticated...these are the phrases that come to mind to accurately describe these wonderfully versatile and delicious egg bites. They are perfect for breakfast or brunch and can also fit right in as a quick snack for those constantly busy and on the go in today's seemingly incessantly hectic world. 

To make these delicious muffins, I first preheated my oven to 350℉. I then cracked six large brown eggs, seasoned them with some salt, ground black pepper, and smoked paprika, and whisked them together to blend. I added about 2 tablespoons of cold water to the eggs to increase fluffiness and lighten the muffin texture. Thereafter, I chopped my medley of vegetables consisting of tomatoes, baby spinach, and red bell peppers before mixing them and setting aside in a bowl. I used a 12-cup non-stick muffin pan shown below so I did not need to spray it in advance. 

To assemble the muffins, I first scooped about 2 teaspoons each of my assorted vegetables into each cup before pouring in the whisked egg mixture about half-way into each cup. This recipe should make about 12 muffins in total, but because I ended up pouring slightly more for the first 2 cups, I ended up with 11...oh well! I baked the muffins at 350℉ for about 20 minutes and served them warm as a delectable brunch dish. I absolutely love just how versatile these muffins are...there are virtually limitless combinations you can use when it comes to the composition of ingredients, including different types of vegetables, cheeses, and even meats for the unapologetic carnivores among us 😄. You can also add a dash of milk or heavy cream to your egg mixture to make more dense and quiche-like muffins. I look forward to trying new combos in the coming months and highly recommend that you give these delightful egg bites a try as well in your own kitchen.
