Honorary Dish of the Day: Our second highlight and honorary dish of the day today is this simple yet irresistibly delicious and utterly delightful Egg-in-a-hole! This dish is perfect for breakfast or brunch and although it may look unbelievably simple, it is surprisingly filling and packed with flavor. Egg-in-a-hole is basically an open-faced sandwich that usually consists of a fried egg cooked within a circular hole created in a slice of bread. There are also plenty of bread substitution options that one can experiment with in this recipe - I definitely look forward to exploring other alternatives such as waffles and bagels in the near future.

For my recipe, I used 4 freshly baked homemade bread slices and utilized a round cookie cutter ring to create the holes in each of them. I made sure that the cut-out pieces most certainly did not go to waste...I had the brilliant idea to turn them into mini French toasts and the result was absolutely amazing 😁! To prepare each egg-in-a-hole sandwich, I first heated up a large frying pan over low heat and lightly coated the surface with about 1/2 teaspoon of butter. I then placed 1 slice of toast with a hole into the pan at a time and cracked an egg directly into the hole. If you're wary about doing this directly into pan, you can first crack the egg into a small bowl then pour it gently into the hole without whisking the contents. I sprinkled a dash of salt, ground black pepper, smoked paprika, and dry parsley flakes over the egg, and let this cook slowly under very low heat. I then topped the egg with bits of shredded cheddar cheese and once I felt the egg had set well on the bottom side after about 4 minutes, I flipped the toast over to the other side, melted an additional 1/2 teaspoon of butter around it, and let it cook as well on that side for another 4 minutes. My husband and I both prefer eggs cooked through so I made sure the yolks were not runny. We both enjoyed this dish immensely as a weekend brunch dish and I am pretty sure it will now become a staple feature in our weekend brunch menu. Simple and easy to prepare yet full of flavor and truly delicious...you can't go wrong with this recipe. I highly encourage you to give it a shot and let us know what the verdict is. Enjoy! 😍😋💖
