Honorary Dish of the Day: Keeping up with our sweet potato theme today, we are closing out the week with these delicious sweet and savory Homemade Sweet Potato Muffins as our honorary dish of the day today 😍. I got the idea for this recipe randomly one day when I wanted try my hand at baking something completely new. Since I love muffins/cupcakes, I naturally gravitated towards a recipe that would take that particular form but include a novel ingredient that would enhance the flavor of the resulting dish. The best candidate for the job? Why the ever versatile sweet potatoes of course! It took two attempts to perfect the recipe, and I am keen on creating different versions in the near future with this one as a template. I grated 1 medium-sized orange sweet potato and worked into my dry ingredients before adding the liquid components. I have to admit the grating process was the most difficult and taxing part of the recipe but the reward was so well worth every ounce of effort 😁.
