Honorary Dish of the Day: Serving up these beautiful Open-Faced Brunch Sandwiches as our honorary dish of the day today! I specifically refer to them as AB&J with Bananas Sandwiches...almond butter & jelly bread slices topped with delicious, fresh bananas 😋. They are one of my absolute favorite go-to brunch treats since they are not only very quick and easy to prepare, but also incredibly delicious and super versatile. They are also very balanced, with enough protein to provide you with plenty of energy to power through your day with ease. Plus, they are really an all-day type of dish since you can have them for breakfast, brunch, lunch, dinner or even just as a tasty snack! Because, why not? 😄
There are quite literally an unlimited number of different combinations one can make with this sandwich as a template. You can also use different butters such as peanut or cashew butter as well as different fruit jams/spreads as substitutes. For these particular sandwiches I am highlighting today, I used freshly baked homemade bread slices, almond butter, blackcurrant fruit spread, and fresh banana slices. For the ones pictured below, I added the leftover creamy mushroom and spinach side from the previous night's dinner for an extra layer of flavor and savory goodness.
