Honorary Dish of the Day: Roasted Sweet Potatoes
Honorary Dish of the Day: Serving up these simple yet truly delicious Roasted Sweet Potatoes as our honorary dish of the day today! I absolutely love the combination of sweet and savory tones that sweet potatoes embody and I am always looking for new ways to elevate them in my home menu. Similar to their regular white potato cousins, sweet potatoes are also incredibly versatile as they can be cooked in so many different ways and can not only shine as a star dish on their own but also as a sumptuous side dish whether for brunch, lunch, or dinner.
For this particular recipe, I kept things very simple by simply peeling and dicing a bag of about 5 medium-sized sweet potatoes into small chunks as captured in the picture above and placed them on a large sheet pan. I seasoned them generously with a sprinkling of olive oil as well as some salt, ground black pepper, smoked paprika, and a dash of honey to provide an extra layer of flavor to the potatoes. I added some raw walnuts for an added crunchy contrast to the dish. I then roasted them at 400℉ for about 35 - 40 minutes until the potatoes became fork tender and served them as a delicious dinner side dish with my chicken orzo soup. Simple, quick, and flavorful...these roasted sweet potatoes will make a great addition to your home menu anytime and come highly recommended. Enjoy! 😋
