Honorary Dish of the Day: Keeping up with our "layered dish" theme today, our first honorary dish of the day this month is this simple yet delightfully delicious Shortbread Yoghurt Parfait 😍. No home cooking required here whatsoever...just simple assembly skills and 4 readily available ingredients are required to create this easy yoghurt parfait that is perfect as either a quick breakfast or brunch dish or as a delectable afternoon snack. I absolutely love yoghurt and proudly classify it as a bonafide comfort food in my menu of food favorites!
Parfaits are a great way to embed additional layers of flavor while adding fun and healthy components to elevate the yoghurt. In my view, their beauty ultimately lies in their limitless versatility...there are countless different delicious combinations that one can create using a variety of ingredients. For this parfait, I first created a bottom layer of store-bought strawberry yoghurt, followed by a crunchy layer of one of my favorite cookies - Scottish shortbread finger cookies as pictured above. I then created another layer of store-bought mango yoghurt followed by a small layer of trail mix consisting of dried cranberries, raisins, and mixed nuts. I then placed another layer of strawberry yoghurt on top of the trail mix and completed the parfait with a crumbly layer of the shortbread cookies. You definitely don't have to use the exact same ingredients I used here...the world is quite literally your oyster when it comes to parfaits and I would recommend utilizing a wide variety of ingredients readily available in your own kitchen pantry to create unique combinations based on your desired taste.
