Signature Dish of the Day: Turmeric Vegetable Fried Rice
Signature Dish of the Day: Resuming the last week of April blog posts with this beautiful, colorful, and absolutely delectable Turmeric Vegetable Fried Rice as our signature dish of the day today! I had not made fried rice in quite a long time, so I spontaneously developed this recipe as a way to reintroduce this delicious dish into our home menu while experimenting with new flavors to enhance my traditional fried rice recipe.
To prepare this simple yet flavorful and sophisticated dish, I first prepared my turmeric rice following my standard recipe as outlined in previous posts. In a medium-sized pot, I first heated up a combination of 2 tablespoons of olive oil and 1 tablespoon of pure coconut oil for about 1 minute under medium-high heat. I then poured in 2 cups of rinsed, long-grain basmati rice and sprinkled 1 teaspoon of turmeric and 1/2 teaspoon of dry parsley and rosemary flakes generously over the rice. I mixed these ingredients together and let the rice toast just a little bit for about 2 minutes before pouring in 4 cups of water. After seasoning generously with some salt to taste and stirring thoroughly to blend together, I let the rice continue cooking uncovered under medium-high heat. Once the water was nearly fully absorbed, I lowered the heat to the lowest setting on my stove and covered the pot to allow the rice to completely absorb all the liquid. You will know the rice is done when it is light and fluffy when stirred with a fork.
Thereafter, I slowly heated up 3 tablespoons of olive oil for about 2 minutes in a large frying pan under medium heat before pouring in a blend of diced white onions and tomatoes. I stirred this mixture and let it sauté for about 3 minutes before adding in about 1/4 cup of frozen peas and carrots in addition to large shavings of 1 large fresh carrot. I seasoned this base mixture with 1 teaspoon each of ground black pepper and smoked paprika as well as a very light sprinkling of salt. After allowing the peas and carrots to cook down for about 5 minutes, I poured in the cooked turmeric rice and drizzled some low-sodium soy sauce generously over the rice before stirring thoroughly to blend well with the base ingredients. I let the rice crisp up a bit for about 2 minutes before turning off the heat and serving the scrumptious fried rice hot out of the pan as a main dinner dish.
