Day 2: Pumpkin Spice Roasted Potato Wedges
One of my guiding principles when it comes to cooking is to fully embrace all the joys and risks of experimentation in all its glorious forms. Hence the reason why I decided to attempt using a spice that is typically reserved for desserts and baked goods to create a unique new flavor for one of my favorite savory side dishes. And what was the result, you may ask? These gloriously delicious and simply irresistible Pumpkin Spice Roasted Potato Wedges! I'm happy to report that the outcome was most certainly well worth the risk...😊
This quick and easy dish only requires about 10 - 15 minutes of prep work but rewards you with a wonderfully tasty meal that can be paired with a diverse range of accompaniments. First pre-heat your oven to 400℉ and then peel about 6 large potatoes and place them in a large bowl of cold water to rinse off excessive starch while also preventing exposure to oxidation, which will cause them to brown quickly/change color. I prefer red potatoes but any variety will work just fine. Rinse thoroughly and dice them into half-wedges - try as much as possible to cut them into equal sizes to help facilitate even cooking. Once done, spread the wedges evenly over a large baking pan/shallow dish. Generously sprinkle about 1½ teaspoons of ground pumpkin spice over the potatoes and season with about 1 teaspoon each of paprika, ground black pepper, and salt to taste. Place them in the pre-heated oven and let them bake for about 30 minutes. To get a crispier and golden-brown texture broil them at high heat for 3 - 5 minutes, monitoring closely to ensure they do not burn. Best served hot with a side of your favorite sauce or as an accompaniment to a main dinner dish. Enjoy! 😍😋💖
