April Special Highlight: Delicious Homemade Crepes

With the onset of April showers and gloriously warm Spring weather, cravings can sometimes strike without warning...and when they do, they must be satisfied with immediate effect 😁. Sometimes the simplest things bring the most joy, and these absolutely delicious Homemade Crepes truly infused some much-needed warmth and exuberance into my weekday recently! Light, fluffy, and easy to prepare, these crepes are simply irresistible and guaranteed to turn your breakfast or brunch meal into a delightful and truly fulfilling feast. Confession: this recipe yielded 5 large crepes, but I could not resist munching on one during the cooking process, all for taste research purposes of course 😉.

For this recipe (yields 5 large crepes, 8 small ones), you will need:
1⅓ cups of all-purpose flour
2 large eggs
1/3 cup brown sugar
1/4 tsp salt
1/4 cup milk
3/4 cup water
1/2 cup olive oil/cooking spray

First, sift the flour into a large bowl then sprinkle the salt and blend into the flour before setting it aside. Thereafter, crack and whisk the eggs in a small bowl - season with just a dash of salt. Combine the whisked eggs with milk and water before stirring in the sugar in order to dissolve evenly into the liquid base. Combine the liquid with the flour in the bowl and whisk vigorously until the ingredients all blend well together into a light batter with a smooth consistency.

Place a large skillet under medium heat and let it warm up for about 2 - 3 minutes before adding a small dash of olive oil. It is important to let the pan sufficiently heat up before you start the cooking process to ensure the batter does not stick to the pan and avoid uneven cooking, especially for that first crepe, which can be quite tricky! Gently pour a small amount of batter at the center of the skillet then lift the pan and turn it in a circular motion to spread the batter evenly across the surface. Monitor the heat closely and reduce it to medium-low if the pan seems to be too hot. Let the crepe cook for at least 2 minutes until the upper surface almost dries out completely before flipping it to the other side and allowing it to cook for another 2 - 3 minutes. Repeat these steps for every crepe until the batter is depleted. Serving options for crepes are virtually limitless - maple syrup, honey, fruit, cream...the list of possible toppings and accompaniments is endless. Serve hot and enjoy with your favorite hot beverage or turn them into a savory dish with a variety of fillings of your choice.
