Happy May! 😊With April showers, come the stunning May flowers...celebrating this beautiful floral month with this light, creamy, and simply delightful Pear Custard Pie as our signature showcase of the month. This delicious dessert is easy to prepare, fun to eat, and just the perfect snack you need to savor as you take in the wonderful sights that the beautiful Spring season has to offer. This dessert is not too sweet and more similar to bread pudding both in flavor and texture. I absolutely love desserts made with fresh fruit, whether in pies, tarts, or cakes...I'll happily gobble them up with no regrets whatsoever πŸ˜„. 

I enjoy eating pears all on their own as deliciously wonderful gifts straight from Mother Nature, but I was randomly curious to try them out in one of my baking adventures recently and that is how the idea for a simple custard-based pie popped into mind. There are numerous varieties of pears - read more about them in this insightful article from this blog. I used Bosc pears for this recipe since they are firmer and have a nice bite to them, but you can definitely substitute with any variety you have available in your pantry. I am keen to continue to experimenting with and refining this recipe in future iterations, including using different types of pears and adding new spice mixtures to my custard base, so I hope you will join me in this culinary journey!

For this recipe, you will need:
1⅓ cups of all-purpose flour
4 - 5 medium Bosc pears
2 Large Eggs, lightly whisked
1 stick of butter, melted
1 cup milk
1/4 cup brown sugar
1/4 tsp salt
1 tsp vanilla extract
1 tsp pumpkin spice

First, preheat the oven to 375℉. Thereafter, peel the pears and cut them into evenly-sized wedges and set them aside. In a large bowl, mix all the dry ingredients together - including flour, salt, and pumpkin spice. Sugar is considered a 'wet' ingredient since it blends well into liquids, so combine this component in a separate bowl first with the whisked eggs, milk, and melted butter. Finally, combine both the dry and wet ingredients and use a whisk to blend them together until it forms a smooth custard that is almost similar to a crepe batter. I used a glass loaf pan for this recipe since I wanted this particular shape for my dessert, but you can also use a round pie pan for a regular-sized pie shape. Once the batter is ready, arrange the pear slices uniformly across the pan and then pout the custard evenly over the fruit until they are completely covered. Place the pan in the oven and let it bake for 45 minutes until you can see a beautiful golden-brown crust form on the surface of the pie. Serve warm or at room temperature and savor every bite all on its own or with a hot beverage of your choice. Enjoy! πŸ˜πŸ˜‹πŸ’–
