Welcoming Summer: Homemade Chicken & Mushroom Pizza

Happy Summer 2021! Welcoming this warm, bright, and vibrant season in style with this irresistibly delicious Homemade Chicken & Mushroom Pizza as our signature dish of the lovely month of June, which is also extra special to me since it is my Birthday month 😍💖. Simple and easy to prepare, this wonderfully scrumptious savory pie is guaranteed to satisfy and makes for the perfect Summer bite any day of the week. 

To make this simple yet elevated dish, first prepare a yeast dough well ahead of time - use this simple pizza dough recipe as a guide. While you can always buy store-bought dough to make things easier, homemade is always best - you get to control the ingredients that go into the dough and it not only tastes significantly better, but is also a truly fun and enjoyable part of the home-cooking process! 

To prepare the toppings, first wash and clean 1 cup of cremini mushrooms then chop them into halves. In addition, dice up 1/2 red onion and 2 small tomatoes. Separately, cut 2 pieces of chicken breast into small chunks and set them aside. In a large skillet, heat up 3 tablespoons of olive oil under medium heat for about 1 minute then pour in the diced mixture of red onions and tomatoes. Season generously with some ground black pepper and smoked paprika and let this cook down for about 3 minutes before adding the mushrooms and chicken pieces. Sprinkle some salt generously to taste and mix all ingredients to blend well together. Add a bit of water or chicken/vegetable broth as needed to ensure the mixture does not coat the bottom of the pan and let it sauté under medium heat for 10 - 15 minutes until the chicken is fully cooked. Turn off the heat and set aside.

Next, preheat the oven to 400℉ then prep the pizza base but placing the dough on a clean, wooden surface with just a light dusting of flour to prevent sticking. Using your hands only, stretch out the dough methodically to form a circle as best as you can. Once done, transfer the pizza base onto a large sheet pan (ideally 21 x 15 inches) then drizzle some olive oil lightly all over the base. Thereafter, begin building your topping layers - start with a mix of shredded cheddar cheese then sprinkle the chicken and mushroom saute mixture evenly across the base. Top the pizza with another light sprinkle of cheese then place the sheet pan in the oven. Let the pizza cook for about 10 - 12 minutes until the edges turn slightly golden brown and the cheese melts completely. Serve hot with a sauce or side and beverage of your choice and be sure to truly savor every single bite. Enjoy! 🍕😊😋💖
