Sautéed Zucchini

In celebration of 🍃Earth Day🍀this week (and every day), we're keeping it simple with this healthy and delicious Sautéed Zucchini as our signature side dish for this month! Sometimes less is more, and this is especially true when it comes to extracting the most abundant flavor from nature's own bountiful harvest. This quick, wholly vegetarian side dish is super easy to prepare, utterly delightful to eat, and pairs seamlessly with a wide array of entrees.

Although considered a Summer vegetable, zucchini's versatility and wide availability has made it a year-round star in our home menu here at the Food Raven kitchen. A member of the squash family, zucchini is a wholesome superfood that comes packed with a plethora of antioxidants and nutrients which are beneficial to our health. 

Ingredients
3 Medium-sized Green Zucchini
1/4 tsp Ground Black Pepper
1/3 tsp Salt
2 tbsp Olive Oil

For this recipe, wash the zucchini thoroughly then cut them first into 2 halves before slicing each portion into smaller half-moon pieces as shown in the picture above. Place a large skillet/frying pan on the stove under medium-high heat and let it warm up for about 3 minutes before adding the olive oil. Allow this to heat up for another 2 minutes then pour in the zucchini slices into the pan, stirring gently occasionally to prevent coating. Let the slices sauté and start to brown a bit on the bottom for about 5 minutes then lightly season with ground black pepper and salt to taste just before turning off the heat. Serve hot on its own or as a complementary side dish with any starch, soup, or protein of your choice. Enjoy! 💚💚💚
