Summer Sweetness: Homemade Strawberry Cake
Happy Summer 🌞🌞🌞! Welcoming the sunshine and celebrating strawberry season in style with this delightful Homemade Strawberry Cake as our signature highlight for the month of June. Fresh, wonderfully aromatic, and simply irresistible...this delectable dessert is guaranteed to brighten your day, anytime. Strawberry cake easily ranks at the top of my list of favorite desserts and come to think of it, this treat has always featured prominently in many of the most significant moments in my life - my husband and I chose this flavor for both our engagement and wedding ceremonies, and I baked this particular cake in honor of our most recent 5-year anniversary (this was my inspiration for the heart-shaped decor captured above). Since June also holds a very special place in my heart as my birthday month, we celebrated with a slightly different version of strawberry cake as well.
I absolutely love cakes that incorporate fresh fruit in them. While freeze-dried options do make a good alternative and tend to infuse a more vibrant color, I strongly advocate using raw fruit as this brings out a genuinely succulent and natural flavor that simply cannot be matched. One major challenge with adding fresh fruit is that it can potentially lead to a soggy cake - for this reason, I recommend first slicing the fruit into smaller pieces and reducing it down into a thick puree to limit the overall moisture content in the final batter.
