Honorary Dish of the Day: Our honorary dish of the day today is this Colorful Cucumber Salad that is a different take on the Cucumber-Avocado Salad recipe we posted last month. I just love the refreshing taste of cucumber, so I often use it as the star ingredient in most of my salads in place of lettuce. This salad contains delicious slices of fresh, organic cucumber, sweet mini red peppers, avocado, and cherry tomatoes all garnished with a dash of delightful honey mustard dressing. I absolutely love the colors that the tomatoes and peppers add to this salad. In addition, this salad is incredibly versatile and there are so many variations that one can make as well including using yellow/orange peppers and tomatoes or adding carrot shavings. Simple, colorful, and takes only 10 minutes tops to make, yet so refreshingly tasty and healthy! Serve as a side dish with a lunch or dinner meal of your choice. Enjoy!
